healthy oatmeal cookies

Rena’s Healthy Sesame Oatmeal Cookies


1 dropper-full pure Stevia from 4 oz. bottle (from the Health Food Store)

½ cup melted Coconut Oil
1 egg beaten
¼ cup Unsweetened Coconut Milk (or you can use regular milk if it’s not a trigger)
1 cup Whole Wheat Flour
1¼ cups Rolled Oats
1/3 cup Soy Flour
½ teaspoon Baking Soda
¼ teaspoon Sea Salt (Recommend Selina Natural Celtic Sea Salt)
1 teaspoon Ground Cinnamon
¾ cups Toasted Sesame Seeds (dry roast in a skillet or in the oven until light brown)
1 Cup Golden Raisins soaked in hot water for several hours
(use raisin soaking water, too, as needed)

Preheat oven to 375 degrees F.

Combine oil, egg, coconut milk and Stevia in a mixing bowl. Stir in remaining ingredients. Mixture should be quite stiff. If it seems too stiff, add the raisin soaking water. If it seems too thin, add more flour.
Drop by teaspoonfuls onto an oiled cookie sheet, and bake for 10-15 minutes.

Note: If you decide that you like the cookies sweeter, next time you can add another dropper-full of Stevia to the recipe, however remember that a healthy wellness goal is changing your taste buds so you prefer things less sweet (while still enjoying them)!

These cookies make a perfect once in a while treat to satisfy any carb cravings.
