Pumpkin Spice Bread

Servings: Makes 1 Loaf

Preparation Time: 35 minutes
Cook Time: 55 minutes



1 1/2 cups whole wheat pastry flour
1 teaspoon baking soda
1 1/2 teaspoon ground cinnamon
1/2 teaspoon allspice
1/8 teaspoon nutmeg
1/8 teaspoon ginger
2 cage-free eggs, beaten
2 Tablespoons plain yogurt
1/4 cup melted organic coconut oil
3/4 cups organic honey
1 cup steamed, mashed pumpkin, seeds removed.


In a large bowl, mix the whole wheat flour, spices and baking soda. In a separate bowl, beat the eggs, then add the the yogurt and mix well. Add the melted coconut oil, honey and mashed pumpkin. Add the dry ingredients to the wet ingredients and mix well.

Lightly grease a 9x5x3 loaf pan. Pour the mixture into the pan and bake at 350 degrees for 55 minutes. Remove from oven and let cool before serving.
