Healthy, Ginger Snap Cookies

Servings: Makes 4 dozen cookies



1 1/4 cup organic all purpose flour
1 cup organic whole wheat flour
3/4 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. celtic sea salt (finely ground)
1 3/4 tsp. ground ginger
1 1/4 tsp. ground cinnamon
1/4 tsp. ground cloves
3/4 cup organic coconut oil melted
1 cage free egg
1 teaspoon + 5 drops pure, whole leaf Stevia (good brands are Sweet leaf and Nu Naturals**



Mix organic whole wheat and all-purpose flour and stir in baking soda, baking powder, ginger, cinnamon, cloves and sea salt, in a bowl.

In a separate bowl, mix the coconut oil, melted, and egg with liquid, pure stevia. Add dry ingredients to wet ingredients.

Roll dough into small balls, one inch in diameter. Place one inch apart on ungreased baking sheets.

Preheat the oven to 350°F. Bake about 14 minutes or until the cookies are firm and slightly browned on the edges. Allow cookies to cool before serving. Enjoy!

** May substitute 1¼ cup coconut sugar for the stevia. In this case add sugar to dry ingredients, instead of wet ingredients.
