Servings: Makes 3.5 cups
2 lbs fresh spinach, steamed and chopped or 10 oz frozen, thawed spinach
2 cups low-fat or non-fat yogurt
1 Tablespoon mayonnaise
1/2 cup finely chopped scallions (green onions)
1/2 cup parsley, finely chopped
1/4 teaspoon sea salt
1/8 teaspoon black pepper
Placed chopped fresh spinach or thawed, previously frozen spinach in a colander. Drain well and squeeze out all excess moisture. Combine all ingredients in high speed blender or food processor, using blade attachment. Mix until spinach is finely chopped.
Serve with fresh, crunchy veggies such as celery, broccoli, cauliflower or carrots or with whole wheat pita strips.
